Beetroot Hummus Sandwich

This sandwich features lovely garnet colored beetroot hummus, paired with avocado and tomatoes on a crusty country bread. A healthy and inviting lunch or light meal.

Time: 45 min. cook time, 15 minutes prep time.


Beetroot Hummus
2 med. beets (covered in water and cooked on the stovetop until tender, about 45 min.)
2 tbs. tahini
2 tbs. fresh squeezed lemon juice
1 clove garlic crushed and minced
11/2 tsp cumin
1/8 tsp. salt
freshly ground black pepper to taste

Sandwich makings
4 slices rustic country bread with thick crust
2 avocados sliced
6 yellow pear tomatoes sliced in half


Beetroot Hummus Skin the cooked beets and mash with the other ingredients. Check for seasonings and add more salt or pepper as desired.
Spread the hummus on the slices of bread and arrange the avocado and on top. Use the peppery flavored arugula as you would with lettuce. Enjoy!
